Question by Eva: Why does green onion dry from the tip while asparagus dries from the root?
The tip of green onions grow yellow when it is stored for a while. The roots of asparagus get dry and hard to chew. Why do they behave differently, since they are both plants?

The asparagus is still trying to grow and is drawing water up from the lower part of the stem, the onion is losing water over its entire surface and the top of the vascular system is drying out. Asparagus is picked before the leaves and flowers are open so its mostly a stem that was drawing much of its energy from the crown and roots. While the onion is a developed leaf that loses water over its entire surface as the cells photosynthesize.
